Mozarella Stuffed Meatballs

Mozzarella Stuffed Keto Meatballs with Homemade Marinara Sauce



For the meatballs: 


For the sauce: 


  1. Preheat your oven to 400°F.
  2. Line a baking sheet with parchment paper. 
  3. To make the meatballs, in a bowl place the ground beef, ground pork, Italian seasoning, Parmesan, parsley, garlic powder, onion powder and salt and black pepper to taste. 
  4. Mix to combine. 
  5. Form the meatballs into 2 tablespoons sized balls. 
  6. Press 1 cube of cheese into each meatball, covering cheese completely. 
  7. Place the meatballs on the prepared baking sheet.
  8. Bake in preheated oven for 20-25 minutes or until fully cooked through.
  9. To make the sauce, in a large skillet, heat the olive oil over medium heat. 
  10. Add the onion and cook for 5 minutes. 
  11. Add the garlic and cook for 30 seconds. 
  12. Add the crushed tomato, dried oregano and dried basil. 
  13. Simmer over low heat for 20 minutes or until thicken to your liking. 
  14. Remove the baking sheet from the oven. 
  15. Add the meatballs to the skillet and toss to coat.
  16. Remove the skillet from the heat. 
  17. Season to taste with salt and black pepper. 
  18. Serve with zucchini noodles.
