Once finished, take your muffins out of the oven and insert a toothpick in the center of one of your muffins and see if it comes out without raw batter. Ingredients

1 cup almond flour
1 cup flaxseed meal
1 ½ tsp baking powder
2 tsp cinnamon
4 large eggs
4 tbsp granulated Stevia or other low carb granulated sweetener
4 tbsp butter, melted
½ tsp vanilla extract
1 cup unsweetened almond milk
½ cup grated apple
3 tbsp unsweetened dried cranberries

Instructions

  1. In a bowl combine the almond flour, flaxseed meal, cinnamon and baking powder. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sweetener until pale and fluffy, about 2-3 minutes.
  3. Add the butter, vanilla extract and almond milk and beat until well combined.
  4. Add in the almond flour mixture and beat until smooth.
  5. Add the grated apple and 2 tablespoons of dried cranberries and mix to combine.
  6. Scoop the batter into the prepared muffin cups.
  7. Sprinkle with remaining cranberries.
  8. Bake in preheated oven for 20- 25 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and allow to cool completely before serving.
