In order for your keto muffins to come out perfectly, it’s important to follow the directions in this recipe carefully. The first step is to combine the dry ingredients in a bowl. A lot of recipes fail because people forget this step. So once you mix the almond flour, flaxseed meal, cinnamon and baking powder, you just need to combine them until smooth.

Add dried cranberries and grated apple to the batter. The apple and dried cranberries will give your muffins added texture with each bite. The last step to making the batter is to finally add the dry ingredients to the wet ingredients and mix.

Using a ladle, distribute the batter evenly in a muffin pan lined with 12 muffin liners. This is the secret to even muffins. Personally, I don’t trust eyeballing my portions so if you’re new to baking, use something to measure your portions, too.

Once finished, take your muffins out of the oven and insert a toothpick in the center of one of your muffins and see if it comes out without raw batter. If the toothpick comes out clean, the muffins are finished. Allow them to completely cool down before serving. Muffins that will not be consumed right away should be stored in the refrigerator.

1 cup almond flour
1 cup flaxseed meal
1 ½ tsp baking powder
2 tsp cinnamon
4 large eggs
4 tbsp granulated Stevia or other low carb granulated sweetener
4 tbsp butter, melted
½ tsp vanilla extract
1 cup unsweetened almond milk
½ cup grated apple
3 tbsp unsweetened dried cranberries


  1. In a bowl combine the almond flour, flaxseed meal, cinnamon and baking powder. Set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sweetener until pale and fluffy, about 2-3 minutes.
  3. Add the butter, vanilla extract and almond milk and beat until well combined.
  4. Add in the almond flour mixture and beat until smooth.
  5. Add the grated apple and 2 tablespoons of dried cranberries and mix to combine.
  6. Scoop the batter into the prepared muffin cups.
  7. Sprinkle with remaining cranberries.
  8. Bake in preheated oven for 20- 25 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and allow to cool completely before serving.
