2 tbsp olive oil
2 tbsp chopped onion
2 garlic cloves, minced
1 medium carrot, chopped
2 medium stalks celery, chopped
½ large red bell pepper, chopped
½ large green bell pepper, chopped
1 medium zucchini, halved and sliced
1 tsp dried oregano
1 bay leaf
1/8 tsp red pepper flakes
4 cups homemade vegetable or chicken broth
1 (14.5-ounce) can diced tomatoes
3 medium asparagus spears, chopped
8 oz broccoli florets
4 cups fresh spinach
2 tbsp chopped fresh parsley
salt and black pepper, to taste


  1. In a large pot heat the olive oil over medium heat.
  2. Add the onion and cook 4-5 minutes or until softened.
  3. Add the garlic and cook for 30 seconds.
  4. Add the celery, carrot, bell peppers, zucchini and saute 3-5 minutes.
  5. Add the broth, diced tomatoes, bay leaf, dried oregano, red pepper flakes and 2 cups of water.
  6. Mix to combine.
  7. Cover with a lid and bring to a boil.
  8. Reduce the heat and simmer for 20 minutes.
  9. Add the broccoli and asparagus and cook for 10 minutes.
  10. Add the spinach and cook for 5 minutes.
  11. Discard the bay leaf.
  12. Season with salt and black pepper to taste.
  13. Stir in the chopped parsley and serve.
