2 tbsp olive oil
1 ½ pounds ground turkey
½ red onion, diced
2 garlic cloves, minced
1 poblano pepper, diced
1 jalapeno pepper, seeded and minced
1 tbsp chili powder
½ tbsp cumin
½ tsp paprika
¼ tsp cayenne pepper
1 can (15 oz) diced tomatoes
1 tbsp granulated Stevia or other low carb granulated sweetener
1 tbsp apple cider vinegar
1 cup chicken broth
salt, black pepper to taste

For garnish (optional):
shredded cheddar cheese
sour cream
lime wedges


  1. In a large pan heat the olive oil over medium heat.
  2. Add the ground turkey and cook, breaking apart with a spatula, until browned.
  3. Add the onion, poblano pepper and jalapeno and cook until vegetables are tender.
  4. Add the garlic and cook for 30 seconds.
  5. Add the remaining ingredients and mix to combine.
  6. Cover with a lid, reduce the heat to low and simmer for 1 hour, stirring occasionally.
  7. Season with salt and black pepper to taste.
  8. Ladle into serving bowls, garnish with cheddar cheese, sour cream and lime (if desired) and serve.
