Creamy Keto Tomato Basil Soup

1 pound fresh ripe tomatoes, cubed
4 garlic cloves, minced
1/4 cup heavy cream
2 tbsp minced fresh basil plus extra leaves for decoration
4 cups homemade chicken broth or water
2 tbsp olive oil
salt, black pepper to taste


  1. In a large pot heat the olive oil over medium heat.
  2. Add the garlic and cook for 30 seconds.
  3. Add the tomato and chicken broth and cover with a lid.
  4. Simmer for 30 minutes.
  5. Puree the soup using an immersion blender.
  6. Stir in the heavy cream and chopped basil and season with salt and black pepper to taste.
  7. Serve immediately.
