Whenever I think of classic soup recipes, there are two that always immediately come to mind: chicken noodle soup and tomato soup. Today I want to share one of my new favorite keto recipes that manages to improve upon the classic great taste of tomato soup by mixing in some fresh basil and garlic. And then to top it all off, it adds in some great keto-friendly ingredients to make the soup extra rich and creamy. There are only five ingredients used in total, making this a nice and easy tomato and basil soup to whip up for whenever you’re in need of a quick and healthy lunch.
A Quick & Tasty Lunchtime Soup
Aside from heating up a bit of olive oil to kick things off, this recipe is made with only five ingredients as the name would suggest. Since there’s really nothing to making the soup (you can check out the specific direction below to see how easy it really is), we’ll instead focus specifically on some of the main ingredients that are used to see how much they have to offer in this recipe.
Tomatoes – You obviously won’t get very far making a tomato soup without the tomatoes. This particular recipe calls for fresh ripe tomatoes instead of any kind of tomato paste in order to produce maximum deliciousness. There’s a good reason why tomatoes are the second most produced and consumed vegetable (1) in the entirety of the United States as well — they’re packed full of vitamins C and E, flavonoids, folate, potassium, beta-carotene, and lycopene, making them an incredibly healthy addition to your diet.

Fresh Basil – The pairing of tomatoes and fresh basil works magic when it comes to making a great tasting meal, and this soup recipe is no exception. While many people make use of the essential oils found in basil for a variety of health purposes, its culinary uses are wide ranging. Research has even indicated that this low calorie herb contains anti-inflammatory properties that may help counter the effects of aging. (2)
Garlic – Capable of doing a lot more than just keeping vampires at bay, garlic is one of the most flavorful herbs that you can cook with while also offering an incredibly vast number of health benefits. Some of its potential therapeutic uses include lowering blood pressure, helping to prevent cancer and heart disease, and boosting your immune system. (3) Conveniently for this recipe, it also meshes exceptionally well with tomatoes and basil to produce an aromatic and flavorful soup.
The other two ingredients used in this soup are the heavy cream and your choice of either homemade chicken broth or water. The heavy cream adds a wonderful amount of creamy thickness to your soup while also upping the total fat content. I’d recommend using chicken broth over water as well, since it enhances the flavor even more while also providing you with essential minerals and electrolytes.
While tomato and basil is a fantastic combination of flavors, I feel like the real genius of this recipe is the addition of the heavy cream. Getting most of your daily calories from healthy fat sources is of the utmost importance when on the keto diet, and heavy cream is a tasty way to easily add more fats into many meals. It works phenomenally well in this soup recipe, taking an already good soup and transforming it into a rich and creamy meal that’s simply to die for!

Creamy Keto Tomato and Basil Soup
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes

1 pound fresh ripe tomatoes, cubed
4 garlic cloves, minced
1/4 cup heavy cream
2 tbsp minced fresh basil plus extra leaves for decoration
4 cups homemade chicken broth or water
2 tbsp olive oil
salt, black pepper to taste
- In a large pot heat the olive oil over medium heat.
- Add the garlic and cook for 30 seconds.
- Add the tomato and chicken broth and cover with a lid.
- Simmer for 30 minutes.
- Puree the soup using an immersion blender.
- Stir in the heavy cream and chopped basil and season with salt and black pepper to taste.
- Serve immediately.
