Ingredients

For the salad:
1 pound lean ground beef
1 tbsp olive oil
2 tbsp homemade or store-bought taco seasoning
10 oz Romaine hearts or iceberg lettuce, chopped
1 avocado, pealed and cubed
3 oz cherry tomatoes, halved
1/3 cup chopped scallions
4 oz cheddar cheese, shredded
¼ cup homemade or store -bought salsa
¼ cup sour cream
salt, black pepper to taste

For the dressing:
¼ cup minced fresh cilantro leaves
1/4 cup grape seed or olive oil
1 ½ tablespoons freshly-squeezed lime juice
1 tablespoons water
½ tablespoon apple cider vinegar
1 teaspoons stevia
½ teaspoon garlic powder
¼ teaspoon dried oregano
salt, black pepper, to taste

Instructions

  1. To make the dressing, place all the ingredients in a bowl and mix to combine.
  2. Set aside.
  3. In a large pan heat the olive oil over medium heat.
  4. Add the beef and stir fry, breaking up in to tiny crumbles with a spatula, until the beef is browned, about 7-10 minutes.
  5. Add taco seasoning and stir until combined.
  6. Season with salt and black pepper to taste.
  7. Place the beef, lettuce, avocado cubes, tomato, cheddar cheese and scallions in a bowl.
  8. Add the dressing and toss to coat.
  9. Top with sour cream and salsa and serve.
