Easy Ground Beef Keto Taco Salad (Classic Comfort Food)
Today I’m going to be sharing a keto salad recipe that is guaranteed to do one thing — satisfy your hunger. You most definitely won’t be feeling hungry after polishing off a bowl of this nice and easy ground beef keto taco salad. It’s full of beefy goodness thanks to using one pound of lean ground beef along with some taco seasoning, a delicious mix of fresh and healthy low carb veggies, and there’s even an incredibly flavorful homemade salad dressing for good measure. Unlike other salads out there, this keto option covers all of your bases by offering a ton of protein and fat, while keeping the carbs to a minimum thanks to some smart veggie choices.

We’ll get the homemade salad dressing out of the way first as it’s super quick and easy to make. All you’ll have to do is place all of your ingredients–the cilantro leaves, grape seed or olive oil, lime juice, water, apple cider vinegar, Stevia, garlic powder, dried oregano, salt, and pepper–into a large bowl and mix them together until they’re well combined. I’m sure you can already tell just by looking at that list how incredibly flavorful the dressing really is, but believe me when I say it turns out even better than you could imagine.
I especially like adding apple cider vinegar into my salad dressings for the nice and tangy flavor it adds (especially with the lime juice in this particular recipe). I’m a big fan of ACV in general and I always keep a bottle on hand. While it’s not the miracle cure-all that some folks on the web make it out to be, it definitely provides some solid benefits such as delaying the absorption of starches and slowing digestion, which will help to keep you feeling full even longer after enjoying this salad. With the dressing done, you can then heat up a bit of olive oil over a medium heat to cook your ground beef in. You should be using either olive oil or coconut oil for nearly all of your keto cooking needs, as they’re both excellent sources of healthy fats that add a solid amount of flavor to your meals as well. Olive oil in particular is an excellent choice to use due to its well known incredible health benefits, such as a lower risk of cardiovascular disease and overall mortality. (2) Once your ground beef has been browned, you can then mix in the taco seasoning, salt, and pepper.
You can now take your ground beef and toss it into a bowl along with the remaining salad ingredients — the lettuce, avocado, cheddar cheese, scallions, and cherry tomatoes. I love adding the avocado into the mix because it’s yet another great source of heart healthy monounsaturated and polyunsaturated fatty acids, helping to make your salad even more satiating. Finally, just add your homemade dressing and toss everything until it’s combined. Easy Ground Beef Keto Taco Salad

Ingredients
For the salad:
1 pound lean ground beef
1 tbsp olive oil
2 tbsp homemade or store-bought taco seasoning
10 oz Romaine hearts or iceberg lettuce, chopped
1 avocado, pealed and cubed
3 oz cherry tomatoes, halved
1/3 cup chopped scallions
4 oz cheddar cheese, shredded
¼ cup homemade or store -bought salsa
¼ cup sour cream
salt, black pepper to taste
For the dressing:
¼ cup minced fresh cilantro leaves
1/4 cup grape seed or olive oil
1 ½ tablespoons freshly-squeezed lime juice
1 tablespoons water
½ tablespoon apple cider vinegar
1 teaspoons stevia
½ teaspoon garlic powder
¼ teaspoon dried oregano
salt, black pepper, to taste
Instructions
- To make the dressing, place all the ingredients in a bowl and mix to combine.
- Set aside.
- In a large pan heat the olive oil over medium heat.
- Add the beef and stir fry, breaking up in to tiny crumbles with a spatula, until the beef is browned, about 7-10 minutes.
- Add taco seasoning and stir until combined.
- Season with salt and black pepper to taste.
- Place the beef, lettuce, avocado cubes, tomato, cheddar cheese and scallions in a bowl.
- Add the dressing and toss to coat.
- Top with sour cream and salsa and serve.
