For serving (optional): 


  1. Preheat oven to 400°F. 
  2. Place the bell pepper halves on a large sheet pan. 
  3. Bake in preheated oven for 15 minutes. 
  4. To make the filling, heat the olive oil over medium heat. 
  5. Add the onion and cook for 5 minutes. 
  6. Add the garlic and cook for 30 seconds. 
  7. Add the beef and cook until no longer pink. 
  8. Add the taco seasoning and mix to combine. 
  9. Remove the sheet pan from the oven. 
  10. Scoop the ground beef mixture into the bell peppers.
  11. Top with cheese. 
  12. Bake in preheated oven for 20 minutes. 
  13. Remove from the oven. 
  14. Serve with guacamole and sliced jalapeno.
