1 pound fresh strawberries, washed and pat dry 4 oz cream cheese 2 tbsp cold heavy cream ¼ cup granulated Stevia or other low carb granulated sweetener ½ tsp vanilla extract 1 oz sugar free dark chocolate, melted
Cut the top off each strawberry and hollow out the inside with a paring knife.
Place on a baking sheet lined with parchment paper and set aside.
Beat the cream cheese, heavy cream, sweetener and vanilla until creamy.
Place the mixture in a pastry bag fitted with a large tip.
Pipe the cream cheese mixture into the strawberries.
