If you’re already a fan of snacking on strawberries, then you’re in for a real treat when you prepare this recipe. And really, strawberries are the perfect fruit choice to use for these cheesecake bites — they’re incredibly flavorful, fairly low carb, and they provide all kinds of fantastic nutritional benefits. To make the cheesecake bites, you’ll be needing one pound of fresh strawberries. Cut off the tops of them, and then hollow them out with a paring knife. You’re going to be filling them with a tasty homemade cheesecake filling, made by beating together the cream cheese, heavy cream, vanilla extract, and Stevia. When you make this dessert, you’re probably going to want to use cream cheese that is at room temperature, as it will be a lot easier to mix with the other ingredients.

After preparing the filling, place it in a pastry bag and then carefully pipe it into the openings on your strawberries. If you haven’t already, go ahead and melt your dark chocolate (make sure that it’s as sugar-free as possible!) and drizzle it over the strawberries. Dark chocolate makes for a perfect match to use with the strawberries to complement their health benefits, as it’s widely known to provide some excellent heart benefits in its own right thanks to its cocoa polyphenols and monounsaturated fat content. Ingredients

1 pound fresh strawberries, washed and pat dry
4 oz cream cheese
2 tbsp cold heavy cream
¼ cup granulated Stevia or other low carb granulated sweetener
½ tsp vanilla extract
1 oz sugar free dark chocolate, melted

Instructions

  1. Cut the top off each strawberry and hollow out the inside with a paring knife.
  2. Place on a baking sheet lined with parchment paper and set aside.
  3. Beat the cream cheese, heavy cream, sweetener and vanilla until creamy.
  4. Place the mixture in a pastry bag fitted with a large tip.
  5. Pipe the cream cheese mixture into the strawberries.
  6. Drizzle the strawberries with melted chocolate.
  7. Refrigerate for 15 minutes and then serve.
