The more I make this keto spinach pie, the more I realize why it’s so popular every time I make it. It’s cheesy, warm and completely soul-satisfying.

To get a perfect spinach pie every time, the trick is to prep the frozen spinach properly.

How to Prep Frozen Spinach for Spinach Pie

  • Thaw. When using frozen spinach, be sure to thaw it first.
  • Squeeze and drain. Squeeze the spinach leaves and drain the excess liquid. If you don’t drain the excess liquid, the spinach will end up watery and soupy. TIP: Use a cheesecloth to drain the squeeze out as much excess water as you can.

How to Make Low Carb Keto Spinach Pie Without Crust

You don’t always need to make a crust when making pie. For this version of spinach pie, I nixed the crust and went straight to the filling. Here is my version of spinach pie without the crust:

  • Whisk together the liquid ingredients. Whisk the eggs and heavy cream.
  • Add the rest of the ingredients. Add in the spinach, cheese, garlic powder and onion powder.
  • Bake. Bake for 35-40 minutes.

Can Spinach Pie Be Frozen?

Yes, you can freeze this spinach pie and store it for up to 2 months. Be sure to keep it tightly sealed in a freezer-safe container.

To reheat, simply bake it in the oven for 10-15 minutes or until warm.

Does Spinach Pie Work Well as a Keto Meal Prep?

I highly recommend making spinach pie for keto-friendly meal prep because it’s an easy way to increase your vegetable intake. This is something many keto dieters struggle with when trying to keep carbs down.

One spinach pie is more than enough for a few days, especially if you decide to pair it with keto garlic breadsticks or these cheddar bay biscuits.

When freezing your meal prep, I recommend portioning out your servings and freezing them individually so that you don’t have to keep reheating the whole pie.

4 Best Cheeses to Use for Spinach Pie

Feel free to experiment with different types of cheese for this spinach pie recipe. The original recipe calls for Swiss cheese, however I’ve also tried these other types of cheese and ended up loving those other adaptations as well:

  • Cream cheese – Cream cheese will help thicken the pie while also serving as a delicious dipping sauce for your keto side dishes/
  • Provolone – Provolone is creamy and has a well-rounded flavor profile.
  • Havarti – Havarti is mild in flavor with hints of sweetness and butter.
  • Fresh mozzarella – Mozzarella is wonderful for melting and has a mild, buttery flavor. It is slightly bland, so you may want to add a pinch of salt when using this cheese for spinach pie.

Be sure to use varieties of cheese that melt to still give that creamy pie filling texture.

Is Spinach Keto-friendly?

Yes, spinach on its own is keto-friendly. Spinach is a low-carb, leafy vegetable that’s high in fiber and low in net carbs, making it ideal for keto dieters even when consumed in large quantities.

Per serving (1 cup): 7 grams of carbs, 4 grams of fiber, 3 grams net carbs.

Ingredients

  • 12 oz frozen spinach thawed, squeezed and drained 
  • 5 eggs
  • 2 ½ cups shredded Swish cheese or your favorite cheese
  • 1 tsp onion powder 
  • ½ tsp garlic powder
  • ½ cup heavy cream 
  • salt and pepper to taste

Instructions

  1. Preheat oven to 375°F. 
  2. Add the eggs and heavy cream to a bowl and whisk to combine. 
  3. Add the onion powder, garlic powder, cheese and spinach and mix to combine.
  4. Pour the mixture into a lightly greased 9 inch pie dish. 
  5. Bake in preheated oven for 35-40 minutes, or until the eggs are set. 
  6. Serve warm.
