Take your cooked onions and add them to a bowl together with the ground turkey, 3 tablespoons of jalapeño relish, flaxseed meal, parsley, egg, Dijon mustard, salt and black pepper. Combine and Cover the bowl with saran wrap and let it marinate in the refrigerator for 25-30 minutes. Allow the ground turkey to soak up the flavors of the relish and other ingredients.

Take the bowl out of the refrigerator and shape the meat into a loaf on a baking sheet lined with parchment paper. The parchment paper will prevent it from stick on to the pan and allow for easy clean-up. Bake the meatloaf in a preheated oven of 350 degrees Fahrenheit for 40 minutes. When the 40 minutes is done, remove the meatloaf and brush it with half of the remaining jalapeño relish then back for an additional 5-10 minutes. Decorate your finished dish with jalapeño slices on the side together with the jalapeño relish.

Ingredients

1 pounds ground turkey
¼ cup flaxseed meal
2 tbsp minced onion
1 tbsp olive oil
¼ cup finely chopped parsley
1 large egg
1 tbsp Dijon mustard
½ tsp freshly ground black pepper
salt to taste

For the jalapeno relish:
1 cups sliced pickled jalapenos
½ cup cornichons
2 garlic cloves, minced
2 tbsp minced onion
½ tsp dry dill
2 tbsp water
salt and black pepper to taste

For decoration:
½ jalapeno, seeded and sliced

Instructions

  1. To make the jalapeno relish, place all the ingredients in a blender and blend until smooth.
  2. Season with salt to taste.
  3. Preheat oven to 350°F.
  4. Line a baking sheet with parchment paper and set aside.
  5. In a skillet heat the olive oil over medium heat.
  6. Add the onion and cook until translucent.
  7. In a bowl place the cooked onion, ground turkey, 3 tablespoons of the jalapeno relish, flaxseed meal, chopped parsley, egg, mustard, black pepper and salt to taste.
  8. With clean hands, mix the ingredients until well combined.
  9. Place the meat mixture on the prepared baking sheet and form into a loaf.
  10. Roast the meatloaf for 40 minutes.
  11. Remove the meatloaf from the oven and brush with ½ of the remaining jalapeno relish.
  12. Bake for another 5-10 minutes.
  13. Decorate with jalapeno slices.
  14. Serve warm with remaining jalapeno relish.
