Words can’t explain how excited I am about this recipe because I’ve been looking for a good keto roll recipe for ages! These keto rolls are derived from the well-known Fathead dough recipe, so you know it’s going to be fantastic. You can actually make this into breadsticks, pizza dough, bagels, burger buns or any form of bread substitute. I like how this keto bread is super filling, too!

You can get creative with this recipe that I’m about to share. It also serves as a great base for different kinds of flavors using herbs, spices and cheeses. Once you’ve gotten the hang of a base recipe, the possibilities are truly endless.

Now, let’s get started! First, preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside. Get a large bowl then combine the almond flour, coconut flour, baking powder and salt to taste. Set this aside as well.

In a microwave safe bowl, add in the mozzarella cheese and cream cheese. Pop in the microwave for about a minute or until everything is completely melted. Carefully add the eggs and beat to combine everything well.

Now, add the almond flour mixture and combine with the cheese mixture. Divide the dough equally into 8 balls, then place the rolls on the prepared baking sheet. Brush the rolls with an egg wash (beaten egg) then sprinkle with sesame seeds on top.

Place the baking sheet in a preheated oven for 20-25 minutes, or until the rolls are golden brown on top. Serve and enjoy warm!

Can I Freeze the Dough and Keep for Later?

These keto rolls are great for meal preps because you can freeze the dough for 1-2 months. Meanwhile, it can keep in the refrigerator for up to 10 days–that’s plenty of time for you to finish it all!

When you decide to consume your stored dough from the freezer or refrigerator, make sure to thaw it out completely before baking. I like to leave mine out, do my chores, and then come back to it.

Pro Tip for Fluffy Rolls Every Time

Before I came up with this recipe, I experimented with various ratios of coconut flour and almond flour. I found that using coconut flour alone makes the keto bread dry and hard. Meanwhile, using just almond flour makes the batter very runny. I was able to come up with the ideal amount of both coconut and almond flour which makes the keto rolls firm but fluffy.

Before experimenting with different keto flours, do try this recipe as is first!

Can I Toast These Keto Rolls?

Yes, it is actually best served warm and toasted. Aside from using a toaster, you can heat up a skillet with butter or oil, then toast both sides for about a minute. Serve with cheese or alongside any of your favorite meals!

For the rolls: 

  • 1 ½ cups low moisture mozzarella,  shredded
  • 2 oz cream cheese
  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1 ½ tbsp baking powder
  • salt to taste 
  • 2 large eggs 

 

For topping: 

  • 1 egg, beaten 
  • sesame seeds (optional)   

Instructions

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper and set aside.

  8. Divide the dough into 8 balls. 
  9. Place the rolls on the prepared baking sheet. 
  10. Brush the rolls with beaten egg. 
  11. Sprinkle with sesame seeds. 
  12. Bake in preheated oven for 20-25 minutes, or until the rolls are golden brown.
  13. Serve warm.
