As soon as I tried these keto pumpkin bars with cream cheese frosting, I knew I had found my new go to treat for the autumn season. The pumpkin bars are delicious enough all on their own, but when you add what is literally the best homemade cream cheese frosting I’ve ever tried? This becomes one keto-friendly snacking option that is out of this world good. The bars themselves are kept low in carbs thanks to the use of keto-friendly ingredients like almond flour, Stevia, and organic, no sugar added pumpkin puree. The cream cheese frosting is super easy to make as well, requiring only four simple ingredients and a few minutes of time to make from scratch.

A Delightful Autumn Treat

To begin making these pumpkin bars, you first must mix together the almond flour, ground cinnamon, and baking powder. Whenever I make a baked good these days, I always use either almond flour or coconut flour. Not only do they each add a pleasant flavor to my baked goods, but they’re both nutrient-dense baking flours, unlike refined wheat flour, which has had most of its nutritional value stripped away during the refinement process. Meanwhile, cinnamon adds another element of delightfully spicy fall flavor to these bars. Cinnamon also packs in a wide range of fantastic health benefits as well. It’s an excellent source of antioxidants that also has anticancer, anti-inflammatory, and antimicrobial properties, among other great medicinal uses. (2)

In a separate bowl, beat together the eggs and your choice of low carb sweetener (I recommend Stevia). Then gradually mix in your melted coconut oil, cream cheese, pure vanilla extract, and organic pumpkin puree as well. Just be sure that the pumpkin puree you use has absolutely no sugar added — I like to make my own for this reason, and I find it tastier when it’s homemade as well. The taste of pumpkin spice is on the same level as cinnamon in my opinion, and it’s equally fantastic when it comes to providing antioxidants and other disease fighting properties. (3)

Add Pumpkin Puree to Keep Your Bars Moist

Mix your pumpkin puree mixture together with your almond flour mix, and then feel free to start baking your bars. While they are baking, you can then make the amazing cream cheese frosting. You only need four simple ingredients for this — the cream cheese obviously, and then some extra low carb granulated sweetener, heavy cream, and vanilla extract. That’s really all that it takes to make a truly tasty cream cheese frosting that adds plenty of creamy fats to this recipe. The frosting is the key to making these pumpkin bars not just taste great, but also exceptionally filling as well.

After frosting the pumpkin bars, place them in your fridge and let them chill overnight before slicing them into 16 bars for serving. Once they are all set, be sure to keep a close eye on them — once everyone else in your family gets a taste of them, they are sure to disappear pretty quickly! As an added side note, the easy to make cream cheese frosting can also be used with terrific results on a wide variety of other keto desserts.

Ingredients

For the bars:
2 eggs
¼ cup granulated Stevia or other low carb granulated sweetener
2 tbsp coconut oil, melted
2 oz cream cheese
½ cup homemade or store-bought organic, no sugar added pumpkin puree, well drained
1 tsp vanilla extract
1 cup almond flour
2 tsp baking powder
1 tsp ground cinnamon or pumpkin spice mix
pinch of salt

For the cream cheese frosting:
6 oz cream cheese, softened
¼ cup granulated Stevia or other low carb granulated sweetener
1 tsp vanilla extract
1 tbsp heavy cream

Instructions

  1. To make the bars, preheat the oven to 350°F.
  2. Line an 8×8 inch baking pan with parchment paper and set aside.
  3. In a bowl mix together the almond flour, ground cinnamon and baking powder and set aside.
  4. In another bowl beat the eggs and sweetener with electric mixer on medium speed until pale and fluffy.
  5. Add in the coconut oil, cream cheese, pumpkin puree and vanilla extract and beat until well combined.
  6. Add in the almond flour mixture and mix to combine.
  7. Pour the batter into the prepared pan.
  8. Bake in preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and allow to cool completely.
  10. To make the frosting, place the cream cheese, sweetener, vanilla extract and heavy cream in a bowl and beat with electric mixer until smooth.
  11. Spreed the frosting over the bars and refrigerate overnight.
  12. Slice into 16 bars and serve.
