  1. In a saucepan combine the heavy cream, sweetener, vanilla extract, salt and cacao powder. 
  2. Heat over medium low heat, whisking constantly, for about 5-6 minutes. 
  3. Whisk in the gelatin powder.
  4. Heat the mixture over medium low heat until the gelatin has dissolved, about 3-4 minutes. 
  5. Do not let boil!
  6. Remove from the heat. 
  7. Press plastic wrap directly onto the surface of the pudding. 
  8. Refrigerate overnight. 
  9. Remove from the fridge and serve.
