Low Carb Radish Keto Potato Salad with Creamy Dill Dressing

  1. In a large pot of boiling water add the radishes.
  2. Boil the radishes for about 5-10 minutes, or until fork tender to your liking.
  3. Remove from the heat and drain. 
  4. Set aside. 
  5. Add the mayonnaise, mustard, dill and lemon juice to a large bowl and mix to combine. 
  6. Add the radishes, eggs, celery and onion. 
  7. Toss to combine. 
  8. Season to taste with salt and black pepper.
  9. Refrigerate until ready to serve.
