How to Make Keto Popcorn
Making your own cheesy keto popcorn is actually pretty easy, but you won’t be using a microwave for this one. Here’s the recipe:
- Preheat the oven. Preheat your oven to 300℉.
- Prepare the baking sheet. Line a baking sheet with parchment paper.
- Prepare the cheese. Cut the Provolone cheese into ½ inch cubes. Use good quality cheese for the best flavor.
- Prepare the cheese for baking. Arrange the cheese cubes evenly on the prepared baking sheet.
- Bake. Bake the cheese in the preheated oven for 4 minutes or until melted.
- Cool. Remove from the oven and allow to cool completely.
- Let the popcorn sit at room temperature. Cover the popcorn with paper towels and leave it to sit out at room temperature for between 3-5 days. Try to forget about it for now!
- Preheat the oven. Preheat your oven to 350℉.
- Bake. Remove the paper towels and bake the melted cheese in the preheated oven for 4-5 minutes (or until most of the popcorn pieces have puffed up).
- Cool. Remove the popcorn from the oven and allow it to cool completely.
- Prepare the coating. Add the sweet corn extract and melted butter to a bowl and mix to combine.
- Toss. Add the cheese popcorn puffs and toss to combine.
- Coat. Add the cheddar powder and toss to coat.
- Serve. Serve immediately.
Can I Use Another Kind of Cheese Instead of Provolone?
Yes, you can swap out the Provolone cheese for another variety if you would like. I just like to use Provolone as a matter of personal preference.
If you want to use a different type of cheese, here are a few other recommended cheeses that I’ve personally used to make yummy keto popcorn as well:

Can I Store Keto Popcorn for Later?
If you want to store any leftover keto popcorn you have on hand, just add it all into an airtight container and keep it stored in the fridge. When properly stored like this, your keto popcorn should keep for up to one week.
This keto popcorn recipe can also be frozen for up to 3 months if you want to extend its shelf life for even longer.
Expect some texture differences once you take the popcorn out of the freezer, especially since it will get moist as it comes down to room temperature.
