Cauliflower Keto Pizza Casserole

For the cauliflower puree:
1 medium cauliflower, washed, trimmed and cut into large pieces
2 tbsp heavy cream
¼ cup cream cheese
1 tbsp butter
1/4 cup shredded mozzarella cheese
salt and pepper to taste

For the toping:
12 slices pepperoni
½ cup shredded mozzarella cheese
1/3 cup homemade or store bought low carb pizza sauce
fresh basil leaves (for decoration)


  1. Preheat oven to 375°F.
  2. Place the cauliflower and 1 tablespoon of water in a microwave safe bowl.
  3. Cover with plastic wrap and microwave on high for 10 minutes.
  4. Remove and place the cauliflower in a food processor.
  5. Add the heavy cream, cream cheese, butter and ¼ cup of shredded mozzarella.
  6. Season with salt and black pepper to taste.
  7. Process until smooth.
  8. Transfer the mixture into a baking dish and smooth with spatula.
  9. Spread the tomato sauce over the top, cover with shredded mozzarella and layer with pepperoni.
  10. Bake in preheated oven for 20- 25 minutes.
  11. Decorate with fresh basil and serve.
