Easy 3-Ingredient Keto Peanut Butter Cookies (These are My Favorite)
Baking keto-approved recipes is much easier than you think. There’s no need to go out and buy special ingredients because most of the ingredients used for many keto dishes can already be found in your own kitchen. However, it’s important to keep in mind that a ketogenic diet is very low in carbohydrates, so ingredients that have a moderate to high carb content should not be used. Fortunately, homemade peanut butter only contains peanuts and its natural oils, so you don’t have anything to worry about.
3 Simple Ingredients
This recipe has only 3 ingredients, and the process is ridiculously simply. You can even get your kids to make these because it only requires a bit of mixing and then forming on the parchment paper. With most peanut butters, the natural oils tend to separate from the rest of the ground peanuts, so make sure to stir your peanut butter well before starting this recipe. Peanuts contain a lot of compounds that offer health benefits such as lowered risk of diabetes and cholesterol, healthy skin and joints, and many more. (1)
Next, you just need to mix in some Stevia, which is an all-natural low-glycemic sweetener. (2) Stevia doesn’t have the same effect on your blood sugar levels as refined sugar, so it won’t knock you out of ketosis while still adding flavor to your recipe. Lastly, you’ll need one egg to add some protein to this dish and to serve as a binder.
You’ll need some parchment paper for the next step. Parchment paper helps with easy clean-up, as well as preventing your cookies from sticking onto your baking sheet. If you don’t have parchment paper handy, you could also just spray your baking sheet with some non-stick cooking spray or spread a thin layer of grass-fed butter on it. These cookies won’t spread much on their own, so you’ll want to flatten them with a fork so that they resemble a flatter cookie. Do a criss-cross pattern or any pattern of your choice.
Once that’s done, all you need to do is leave them to bake for 10-15 minutes before taking them out and letting them cool. You’ll know they’re done when the edges are slightly browned. When they first come out of the oven, they’ll be very soft and may crumble, so I like to leave them out on a cooling rack to firm up a bit.
Get Creative!
Even though this recipe only has 3 ingredients, you can also add some keto chocolate on top for some added decadence. Chocolate and peanut butter is one of the tastiest flavor combinations for desserts, especially cookies.
There are some complicated keto recipes out there, and while I’m sure those are delicious too, I don’t always have the time for a whole laundry list of ingredients and length procedures. This 3-ingredient recipe is one of my favorites because it takes no time at all to make, and it is an excellent way to get in some healthy fats.

Ingredients
1 cup peanut butter
½ cup granulated Stevia
1 egg
Instructions
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper.
- Place all the ingredients in a bowl and mix to combine.
- Roll the dough into 1-inch balls and place on the prepared baking sheet.
- Flatten the cookies, using a fork, in a criss-cross pattern.
- Bake for 10-15 minutes or until edges of cookies have browned.
Just found you on fb.. And thank god for it.. Very very new to keto.. So.. Been making these cookies for years but with regular sugar.. Was going to replace the sugar with swerve.. Again new to these keto ingredients.. With swerve.. Do i still use a cup like regular sugar.. Or use half a cup like your stevia??.. Thank you for any info..
Not sure you got a response, but I’m trying these tonight and will be using the conversion so I’ll use 1 cup of granulated sugar and see how they come out. I am also using almond butter instead of peanut butter. Let’s see what happens!
I know on the Trulia (artificial sweetener) package, it says 1/2 trulia = 1 cup sugar. I don’t know if this helps but you might look at the bottom of the swerve package to see if it has a conversion chart.
