Honey Roasted Keto Peanut Butter Protein Balls with Strawberry Jam

For the balls:


For the roasted peanuts: 


  1. Using a teaspoon measuring spoon, scoop out balls of jam and lay them on a baking sheet lined with parchment paper.
  2. Freeze for 30 minutes or until the jam balls have firmed up a bit.
  3. Preheat oven to 350°F. 
  4. Line another baking sheet with parchment paper. 
  5. Add the peanuts, melted butter and honey to a bowl and toss to coat. 
  6. Transfer peanuts to the prepared baking sheet and spread into a single layer.
  7. Bake in preheated oven for 10 minutes, stirring occasionally.
  8. Remove from the oven and allow to cool completely. 
  9. Add the peanuts to a food processor and pulse a few times. 
  10. Transfer the chopped peanuts to a plate and set aside. 
  11. Add the peanut butter and sweetener to a bowl and beat until well combined.  
  12. Add the coconut flour and mix to combine. 
  13. Divide the dough into 16 balls. 
  14. Flatten each ball into a disk.
  15. Place the jam ball in the middle of the disk
  16. Lift up and pinch the edges of the peanut butter so that they’re coming up around the jam ball. 
  17. Roll the ball into the chopped peanuts. 
  18. Repeat until all materials have been used. 
  19. Store in the freezer in an airtight container. 
  20. Remove from the freezer 5-10 minutes before serving.
