Peanut Butter Stuffed Chocolate Keto Cookie Sandwiches

Ingredients

For the cookies:
2 cups almond flour
½ cup unsweetened cocoa powder
1 tsp baking powder
pinch of salt

2 tbsp melted coconut oil
½ cup granulated Stevia or other low carb granulated sweetener
1 tsp vanilla extract
1 egg

For the filling:
4 oz cream cheese, softened
½ cup creamy peanut butter
2 tbsp heavy cream
¼ cup granulated Stevia or other low carb granulated sweetener

Instructions

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a bowl combine the almond flour, cocoa powder, baking powder and pinch of salt.
  4. In another bowl whisk the sweetener, egg, coconut oil and vanilla extract until smooth.
  5. Stir the dry ingredients into the wet ingredients with a wooden spoon.
  6. Drop by rounded tablespoon onto the prepared baking sheet.
  7. Bake for 10-12 minutes.
  8. Remove from the oven and allow to cool completely before adding filling.
  9. To make the filling, beat the cream cheese, peanut butter, and sweetener together until well combined.
  10. Beat in the heavy cream until smooth.
  11. Pipe the filling onto bottoms of half the cookies.
  12. Sandwich with remaining cookies and serve.
