Make-Ahead Keto Pancake Mix

For the pancake mix:
½ cup vanilla whey protein powder
¼ cup almond flour 
2 tsp baking powder
pinch of salt

For one batch of pancakes (1 serving):
3 tbsp pancake mix
1 large egg
1 tsp melted butter plus extra for greasing


  1. To make the pancake mix in a bowl place the vanilla whey protein powder, almond flour, pinch of salt and baking powder.
  2. Mix to combine.
  3. Store in a sealable container or a jar in a cool, dry place.
  4. To make the pancakes, in a bowl whisk 1 egg and 1 teaspoon of melted butter.
  5. Give the pancake mix a good shake then measure 3 tablespoons and add in the bowl.
  6. Mix to combine.
  7. Lightly grease a non stick skillet with extra butter.
  8. Heat the skillet over medium low heat until hot.
  9. Drop 1/8 cup of batter for each pancake onto the hot skillet.
  10. Cook until small bubbles begin to form on the top.
  11. Carefully flip the pancakes and cook on the other side 30- 60 seconds or until cooked through.
  12. Serve warm.
