Instructions

  1. Preheat oven to 200ºF. 
  2. Line a baking sheet with parchment paper and set aside. 
  3. Place the egg whites in a large bowl. 
  4. Add the lemon juice and cream of tartar and beat on medium speed until foamy. 
  5. Gradually beat in sweetener. 
  6. Continue beating on high spread until stiff glossy peaks form.
  7. Add the lemon zest and beat to combine. 
  8. Transfer the meringue to a piping bag. 
  9. Pipe small meringues onto the prepared baking sheet. 
  10. Bake in the oven for 60 minutes or until firm to the touch. 
  11. Turn off the oven (do not open oven door) and leave meringues in oven 1 hour. 
  12. Remove from oven and allow to cool completely on the baking sheet. 
  13. Serve or store in an airtight container and keep in a dry place.
