Low Carb Keto Lemon Blueberry Bread (Quick and Easy Recipe)

  1. Preheat oven to 350ºF. 
  2. Line an 8×4 inch loaf pan with parchment paper. Set aside.
  3. In a bowl combine the almond flour, baking powder and xanthan gum. Set aside. 
  4. In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sweetener until pale and fluffy, about 3-5 minutes. 
  5. Add the butter, lemon zest and vanilla extract and beat until well combined. 
  6. Add in the almond flour mixture and beat until smooth.  
  7. Gently fold in the blueberries. 
  8. Transfer the batter into the prepared pan. 
  9. Bake in preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean. 
  10. Remove from the oven and allow to cool completely before serving.
