Ingredients

  • 2 ½ cups almond flour
  • ½ cup granulated Stevia or other low carb granulated sweetener 
  • ½ tbsp baking powder
  • ½ tsp xanthan gum or flaxseed meal 
  • 1/3 cup unsweetened almond milk
  • 1/3 cup melted butter
  • 3 large eggs
  • ½ tsp vanilla extract
  • 1 tbsp lemon zest 
  • 3/4 cup fresh blueberries

Instructions

  5. Add the butter, lemon zest and vanilla extract and beat until well combined. 
  6. Add in the almond flour mixture and beat until smooth.  
  7. Gently fold in the blueberries. 
  8. Transfer the batter into the prepared pan. 
  9. Bake in preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean. 
  10. Remove from the oven and allow to cool completely before serving.

  1. Just finished making and serving. It’s excellent! Husband loved it as well. I almost forgot to add the unsweetened almond milk as it was left off the “how to” part of the recipe. Also, didn’t have lemon zest, but we still loved it. Will make it again!
