  1. Lightly grease a 9-inch pie dish and set aside. 
  2. To make the crust, in a bowl combine the almond flour, cinnamon and sweetener. 
  3. Add the butter and mix until soft dough forms. 
  4. Press the mixture into the bottom and up the sides of the pie dish.
  5. Refrigerate for minimum one hour. 
  6. To make the filing, add the butter, sweetener and 1 ¼ cup of heavy cream to a saucepan. 
  7. Bring to a boil over medium heat, whisking constantly. 
  8. Lower the heat and simmer for 20 minutes. 
  9. Remove from the heat and set aside. 
  10. Preheat oven to 350°F.
  11. Remove the crust from the refrigerator. 
  12. Bake in preheated oven for 10 minutes. 
  13. In a large bowl add the eggs and, heavy cream, heavy cream – butter mixture and beat until just combined.
  14. Add the lime juice and lime zest and beat to combine. 
  15. Pour the filling onto the crust.
  16. Reduce the oven temperature to 300°F.  
  17. Return the pie dish to the oven and bake for 35-40 minutes or until there is only a slight wobble in the center.
  18. Remove from the oven and allow to cool completely. 
  19. Refrigerate for minimum 2 hours before serving. 
  20. Decorate with whipped cream and lime slices (if using) and serve.
