Creamy Ham Soup (Keto, Low Carb)

  1. Melt the butter over medium heat in a large pot. 
  2. Add the onion and cook for 5 minutes. 
  3. Add the cauliflower, carrot, ham and chicken stock and simmer over medium heat for 20 minutes or until the vegetables are fork tender. 
  4. Add the heavy cream. 
  5. Bring to a boil. 
  6. Remove from the heat. 
  7. Stir in the shredded cheddar until meted. 
  8. Season to taste with salt and black pepper. 
  9. Top with extra shredded cheddar and green onion and serve.
