½ onion, finely sliced
5 slices bacon, cut into ¼ inch pieces
1 tbsp olive oil
10 oz green beans, trimmed and cut into 1-inch pieces
5 oz mushrooms, sliced
2 garlic cloves, minced
2 tbsp butter
½ cup chicken broth
½ cup heavy cream
1 cup shredded cheddar cheese
salt, black pepper to taste


  1. Preheat oven to 375°F.
  2. Blanch the green beans in a large pot of well salted boiling water, until the beans are bright green and crisp-tender, 2-3 minutes. Drain well and set aside.
  3. In a large skillet heat 1 tbsp olive oil over medium heat. Add the bacon and cook until crisp. Remove from the pan and set aside.
  4. In the same pan add the onions and saute, stirring occasionally, until caramelized.  Remove from the pan and set aside.
  5. In the same pan melt 2 tbsp butter over medium heat. Add the mushrooms and cook for 5 minutes. Add the garlic and cook for 30 seconds.Add the chicken broth and heavy cream and mix to combine. Add the shredded cheddar and cook, stirring occasionally, until the sauce thickens. Season with black pepper and salt to taste. Remove from the heat.
  6. Place the green beans in a casserole dish. Pour the mushroom- cheese mixture over the green beans. Toss to coat.  Top with onions and bacon.  Bake in preheated oven for 15 -20 minutes.
  7. Serve warm.
