Keto Garlic Chicken Skillet with Red Onions and Mushrooms

For the chicken:
1 1/2 pounds chicken thighs (bone in, skin on)
1 tsp onion powder
1 tsp garlic powder
½ tsp dried thyme
½ tsp dried rosemary
salt and black pepper to taste
2 tbsp olive oil
The rest of ingredients:
1 tbsp butter
8 oz mushrooms, sliced
1 red onion, sliced
4 garlic cloves, minced
1 tbsp chopped fresh parsley
¼ tsp dried thyme
¼ tsp dried rosemary
salt and black pepper to taste
Preheat oven to 350°F.
To make the rub for the chicken, in a small bowl combine the onion powder, garlic powder, thyme, rosemary and salt and black pepper to taste.
Coat all sides of the chicken with the dry rub.
Heat the olive oil over medium heat in a large oven-safe skillet.
Add the chicken and cook 4 minutes per side.
Remove the chicken from the skillet.
In the same skillet, melt the butter.
Add the red onion and cook for 2-3 minutes.
Add the garlic and cook for 30 seconds.
Add the mushrooms and cook for 4 minutes.
Return the chicken to the skillet.
Place the skillet to the oven.
Bake for 20-25 minutes or until chicken is cooked through.
Remove from the oven.
Sprinkle with fresh parsley and serve.
