Cinnamon Keto French Toast Casserole (OMG!)

For the bread:
- 1 ½ cups almond flour
- ½ cup flaxseed meal
- 1 ½ tsp baking powder
- 1 ½ tsp xanthan gum
- pinch of salt
- 3 egg
- 3 tbsp granulated Stevia or other low carb granulated sweetener
- 1 ½ tsp apple cider vinegar
- 4 tbsp melted butter
- 6 tbsp sour cream
For the casserole:
- 4 eggs
- 2/3 cup heavy cream
- 1/3 cup unsweetened almond milk
- 1/3 cup granulated Stevia or other low carb granulated sweetener
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
For the topping:
- 3 tbsp melted butter
- 3 tbsp granulated Stevia or other low carb granulated sweetener
- 1 tsp ground cinnamon
- ¼ cup chopped walnuts
- To make the bread, in a medium bowl combine the almond flour, flaxseed meal, baking powder, xanthan gum and pinch of sat. Set aside.
- In a microwave safe bowl combine the butter and sour cream.
- Add the eggs and sweetener and beat to combine.
- Add the apple cider vinegar and mix to combine.
- Add the almond flour mixture and mix to combine.
- Microwave on high for 6 minutes or until just firm to touch and toothpick inserted into the center comes out clean.
- Remove from the microwave oven and allow o cool completely.
- Cut into cubes.
- Place the cubes on a large baking sheet.
- Turn the oven to broil, and put the baking sheet on the top rack of the oven, closest to the broiler.
- Broil the bread cubes for 1-2 minutes or until lightly golden.
- Remove from the oven and set aside.
- To make the casserole, in a large bowl, combine the heavy cream, almond milk, sweetener, vanilla extract and cinnamon.
- Add the bread cubes to a baking dish.
- Pour the egg mixture over the bread cubes and press down with a spoon.
- Cover with foil and refrigerate for minimum 4 hours or overnight.
- Preheat oven to 375°F.
- To make the topping, in a small bowl combine all the ingredients.
- Spread the topping evenly over the bread.
- Bake in preheated oven for 35-45 minutes, until puffed and lightly golden.
