The Best Keto Egg Salad Sandwich (with 90 Second Bread)

For this keto egg salad recipe, I must insist that you enjoy it with toasted bread for the full effect. I love making sandwiches for light lunches at work, so this is definitely one of my go-to recipes when I’m rushing out the door.

Fast Food Doesn’t Have to Mean Junk Food

Here’s a tip for those who don’t have much time to cook: Have some of the ingredients already prepped and ready to go in the refrigerator so you can cut your cooking time even more. For example, wash your salad greens and pack them into containers so that you can just grab one and go, or you could do what I do and boil a dozen eggs and just keep them in the fridge for a quick post-workout snack.

I took some of those hard-boiled eggs and turned them into this deliciously seasoned egg salad. All you have to do is combine the mayonnaise, mustard and paprika in one bowl before adding the chopped eggs and green onions. Always season with salt and pepper to taste to bring out the natural flavors of your ingredients.

Once all the ingredients are mixed well, serve it on top of your keto bread and you’ve got yourself a hearty meal in just a few minutes.

Experiment with Different Types of Keto Bread

Even though a keto diet is low in carbs, there are plenty of options you can try while still keeping within your dietary guidelines. I know for a fact that there are countless recipes of keto bread that are not only low-carb, they’re also incredibly tasty.

Almond flour and coconut flour are typically used to replace wheat flour in keto baking, but the ratios used make a huge difference in the outcome of each recipe. Try to play around with more or less of the other, combined with different levels of moisture in the batter and see how that affects the texture of the finished product. Bread can be tricky to make, but when you find a recipe that works for you, you’ll be hooked!

How Long Will This Egg Salad Keep in the Refrigerator?

The eggs are already cooked, so the only thing you really need to worry about is the mayonnaise. Make sure it’s properly refrigerated so it doesn’t spoil. Otherwise, it can keep for 2-4 days in the refrigerator. Any longer than that isn’t recommended because this egg salad is best eaten fresh.

Ingredients

8 hard boiled eggs, peeled and chopped 

½ cup mayonnaise 

1 tsp Dijon mustard 

¼ cup chopped green onion

¼ teaspoon paprika 

salt and pepper to taste 

For serving: 

90 second keto bread

Instructions

  1. In a small bowl combine the mayonnaise, mustard and paprika. 
  2. Add the chopped eggs, green onions, mayonnaise mixture, salt and black pepper to a large bowl and toss to combine. 
  3. Serve with toasted 90 seconds keto bread.
