Sausage and Cheese Keto Egg Muffins

Ingredients

10 eggs
1 cup shredded cheddar cheese
2 tbsp chopped fresh cilantro
½ red bell pepper, diced
1 pound ground turkey sausage
1 tbsp olive oil
salt, black pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease 12 muffin cups. Set aside.
  3. Heat the olive oil over medium heat.
  4. Add the turkey sausage and cook until no pink remains.
  5. Divide the red pepper, half of shredded cheese and cooked sausage over 12 wells.
  6. In a large bowl combine the eggs and cilantro.
  7. Season with salt and black pepper to taste.
  8. Pour the egg mixture over the sausage in each well.
  9. Sprinkle with remaining shredded cheese.
  10. Bake 22-25 minutes or until set.
  11. Remove from cups and serve warm or let cool completely and freeze.
