If you’re in need of a satisfying, delicious keto dinner idea that is super easy to make, then look no further. This crockpot meatloaf with BBQ sauce recipe is ridiculously good and only takes about 15 minutes to prepare, making it a perfect dinner option for anyone out there who loves to keep things nice and simple (I’m definitely in that camp). The meatloaf is made with ground beef and a delightful mix of herbs and spices and the homemade BBQ sauce easily rivals anything that you’ll find on store shelves. In fact, the BBQ sauce is even better because there’s no junk additives to be found — instead, it’s made with a fantastic selection of tasty keto-friendly ingredients.

The Best Meatloaf and BBQ Sauce Ever?

Since the homemade BBQ sauce plays such a big role in how delicious this meatloaf recipe turns out, it’s only fitting to kick things off by preparing that first. Don’t let the long list of ingredients put you off — it’s incredibly simple to make. Simply combine everything in a bowl and then cover it with a plastic wrap before placing it in the refrigerator. Nothing to it!

Using ingredients like smoked paprika, red pepper flakes, chili powder, and cumin ends up giving the BBQ sauce an intense amount of flavor that you’re sure to love. A lot of the spiciness in the sauce is due to the capsaicin provided by the pepper flakes and chili powder. Not only does it give the sauce a bit of a kick, but studies have also shown that capsaicin may play an important role in helping to prevent several types of chronic diseases. (1)

With your BBQ sauce in the fridge, it’s now time to make the meatloaf. You’ll need one-and-a-half pounds of ground beef for it (since this is a keto recipe, I’d recommend passing on the lean ground beef and going for medium ground beef instead to help increase the fat content). Place your beef into a large bowl and combine it with a single large egg, some grated Parmesan cheese, oregano, thyme, rosemary, basil, garlic powder, and pepper.

I’m sure you can already tell by seeing everything that you’re adding in with your ground beef that this recipe definitely makes one incredibly tasty meatloaf. I’m especially fond of the combination of herbs used here, as they all work together to really provide a ton of flavor. Not only that, but they’re all particularly potent sources of disease-fighting antioxidants. (2) Since oxidative stress plays a major role in the development of many types of diseases, it’s important to make sure that your diet contains plenty of foods that are rich in antioxidants.

All that’s left to do is shape your ground beef mixture into a loaf on a sheet of tinfoil and then transfer it (with the tinfoil!) into your crockpot. Cook it on low for about five hours and then brush the top and sides with one-third of the BBQ sauce. Finally, let the meatloaf cook for another 30-60 minutes before removing it from the crockpot. Slice it up and serve it along with the rest of the BBQ sauce for an incredibly tasty and keto-friendly meatloaf dinner.

Recommended Keto Side Dishes

While this meatloaf is a heavy hitter on its own, it can’t hurt to have a couple of side dishes on the side. Personally, I like having these:

Cauliflower Rice – Made of riced cauliflower, this side dish is lower in carbs than regular white rice. Keto dieters have different carb allowance thresholds, so if you can afford to, cauliflower rice is definitely a favorite of mine.

Grilled/Roasted Vegetables – The meatloaf is rich and satiating on its own. For something light on the side, grill or roast some low-carb vegetables such as zucchini or eggplant.

Green Salad – No cooking needed with this one. If you’re in a hurry to sit down for dinner, you could easily put together a green salad with some light vinaigrette or avocado dressing.

Ingredients

For the meatloaf:
1 ½ pound ground beef
1 large egg
1 tbsp oregano
2 tsp thyme
2 tsp rosemary
2 tsp basil
2 tsp garlic powder
1 tsp pepper
½ cup grated Parmesan cheese

For BBQ sauce:
½ cup homemade beef broth or stock
3 oz organic, no sugar added tomato paste
½ tsp granulated Stevia
1 tsp apple cider vinegar
½ tsp dijon mustard
¼ tsp smoked paprika
¼ tsp red pepper flakes
¼ tsp chili powder
1 tsp onion powder
1 tsp garlic powder
¼ tsp cumin
salt to taste

Instructions

  1. To make the sauce, combine all the ingredients in a bowl.
  2. Cover with plastic wrap and refrigerate.
  3. To make the meatloaf, place all the ingredients in a large bowl and mix until well combined.
  4. Shape the mixture into loaf on a large sheet of tinfoil.
  5. Place the meatloaf with the foil in a slow cooker.
  6. Cover with a lid and cook on low for 5 hours.
  7. Remove the lid and brush the top and sides with 1/3 cup of BBQ sauce.
  8. Cover and cook for another 30-60 minutes.
  9. Carefully lift the meatloaf, slice and serve with reaming BBQ sauce.
