Authentic Crockpot Chicken Tacos

Ingredients

2 pounds boneless, skinless chicken breasts
2 tsp cumin powder
1 ½ tsp chili powder
1 ½ tsp dried oregano
3 garlic cloves, minced
2 tbsp chopped onion
½ tsp salt
1 lime, juiced
¼ cup chopped cilantro

Instructions

  1. In a small bowl combine the chili powder, cumin, oregano, and salt.
  2. Place the chicken in a slow cooker.
  3. Sprinkle the dry rub evenly over both sides of the chicken.
  4. Add the minced garlic, chopped onion, lime juice and ¼ cup of water and mix to combine.
  5. Cover with a lid and cook on low for 4-5 hours or until the chicken is cooked through.
  6. Remove the chicken and shred it into bite-size pieces with two forks.
  7. Return the chicken to the slow cooker, add the chopped cilantro and stir.
  8. Serve with low carb tortillas or lettuce cups and your favorite toppings (sour cream, chopped avocado, tomato, jalapeno…)
