  1. Melt the butter over medium heat in a large pot. 
  2. Add the onion and celery and cook for 3-5 minutes. 
  3. Add the chicken and stock. 
  4. Cover with a lid and simmer for 40-50 minutes. 
  5. Remove the chicken from the pot and shred with 2 forks. 
  6. Lower the heat to low. 
  7. Add the heavy cream to the pot and bring to simmer. 
  8. Sprinkle the xanthan gum over the soup and whisk for 3-5 minutes or until thickened. 
  9. Stir in the shredded chicken. 
  10. Season to taste with salt and black pepper. 
  11. Remove from the heat. 
  12. Sprinkle with chopped chives and serve.
