Keto Coconut Mug Cake with a Dark Chocolate Drizzle

I’ve been on a huge coconut kick as of late. That’s alright though, as coconuts are such a staple part of my keto diet that I honestly don’t know what I would do without them. They’re such an easy way to easily get more fat calories in throughout the day. Some of my favorite recent coconut treats include coconut fat bombs and even coconut keto ice cream. This keto coconut mug cake with a dark chocolate drizzle recipe makes perfect use of coconut flour along with some other great keto-friendly ingredients to make a quick, easy, and oh so tasty dessert.

Coconut and Chocolate – A Match Made in Heaven

We’ve recently shared another great mug cake recipe made with coconut flour, which is also definitely worth your time to check out. This particular recipe is different in a few key areas however. While our last coconut mug cake recipe also included chocolate and peanut butter mixed in, this mug cake instead offers a solid amount of protein thanks to the use of a low carb vanilla protein powder. And while there’s no peanut butter to be found in this recipe, you’ll still be able to satisfy your chocolate sweet tooth thanks to the decadent dark chocolate drizzle that you’ll be making.

Making the drizzle is easy enough as well — simply melt your sugar free dark chocolate and set it aside until you’re ready to add it to the mug cake. There are two reasons this recipe calls for dark chocolate. The first is that it’s sugar free and rich in both healthy saturated and monounsaturated fats, making it perfect for keto recipes. Second, the other biologically active components in dark chocolate are incredibly beneficial for your health, providing numerous cardiovascular benefits. (1)

As far as the mug cake itself goes, you’ll be getting the great taste of coconut by using coconut flour. Along with almond flour, I love to use coconut flour in all of my keto baking recipes as it’s a terrific healthy replacement for refined wheat flours. It’s an excellent source of dietary fiber, featuring a moderate amount of protein, and an abundance of healthy medium chain triglyceride (MCT) fats. MCTs are a terrific source of fat to use for entering and staying in ketosis, and as we all know, there are countless benefits to be gained once your body begins burning ketones for fuel, such as increased fat burning and improved cognitive function. High in Protein and Good Fats

This mug cake also offers quite a few other excellent sources of dietary fat as well. You’ll start by whisking together a single large egg with some full fat milk, melted butter, pure vanilla extract, and Stevia. After doing that, you can mix in the coconut flour and vanilla protein powder, along with a bit of baking powder. After microwaving the mug cake for between 75-90 seconds, drizzle your melted dark chocolate over top of it and you’re all set to enjoy this yummy treat!

Ingredients

1 egg
¼ cup full fat milk
1 tbsp melted butter
¼ tsp vanilla extract
1 tbsp granulated Stevia or other low carb granulated sweetener
1 scoop (1 oz) vanilla protein powder
1 tbsp coconut flour
½ tsp baking powder
1 tbsp melted sugar free dark chocolate

Instructions

In a microwave-safe mug place the egg, milk, sweetener, butter and vanilla extract and whisk to combine.

Add the coconut flour, vanilla protein powder and baking powder and whisk until smooth.

Microwave on high for 75-90 seconds or until just firm to touch and toothpick inserted into the center comes out clean.

Drizzle with melted chocolate and serve.
