3-Minute Coconut Flour Mug Cake (Keto-Friendly and Low Carb)

The mug cake recipe that I’m about to share with you guys today combines three of the best dessert flavors out there into one great tasting keto-friendly treat — coconut, chocolate, and peanut butter. These three flavors combine beautifully in this super quick and easy 3-minute coconut flour mug cake to make a healthy dessert option that you can whip together almost effortlessly whenever you’re craving a yummy treat. On top of the three aforementioned flavors, this recipe also keeps keto dieters in mind as well by adding in a bit of heavy cream to make sure that you’re getting plenty of quality fats with your dessert.

A Trifecta of Great Tasting Flavors

When making the mug cake, you’re going to start by making the base of your mug cake. To do so, get your microwave-safe mug and add one large egg, the heavy cream, peanut butter, pure vanilla extract, and a low carb sweetener (I recommend using something like Stevia over other artificial options). Whisk all of these ingredients together until they’re combined.

With that out of the way, you can next add the coconut flour into the mug. Coconut flour is a fantastic alternative to refined wheat flour when following the keto diet because it’s so nutrient-dense. It’s a great source of dietary fiber, protein, and healthy medium chain triglyceride fatty acids. Coconut flour also has the added benefit of giving your recipes a delightful hint of coconut flavor, which works amazingly well in this mug cake. As a final note, coconut flour is also a great option for individuals with diabetes who are using the keto diet to attempt to keep their condition under control — it’s extremely low on the glycemic index and it won’t cause blood sugar spikes like a carb-heavy wheat flour would. Using cacao powder for the chocolate flavor is another great way to keep this recipe on the healthy side of things by keeping it sugar-free. As a chocolate lover, I’ve long since given up milk chocolate completely. Instead, I enjoy cacao powder, cocoa powder, and dark chocolate in abundance. Not only are they all great sources of healthy fats, antioxidants, and other disease-fighting polyphenols, but studies have even shown that cocoa flavanol has neuroprotective properties that helps to keep your mind sharp as you age. (2) Eating chocolate doesn’t just satisfy your sweet tooth cravings, it actually helps to keep you smart as well!

You’ll want to whisk in a bit of baking powder at the same time that you add in the coconut flour and cacao powder. Once your mixture is nice and smooth, go ahead and microwave it for 75-90 seconds. That’s all there is to it — three quick minutes of effort earns you this decadent and delicious keto dessert! When I make this mug cake, I also like to melt a bit of extra peanut butter to drizzle over the top before I dig in. It’s a great way to add a bit of extra fat calories and even more great taste to this mug cake, I definitely recommend giving it a try.

When cooking in the microwave, bear in mind that less is more. If you’re not sure about the cooking time you’ll need for your microwave, err on the side of caution to ensure that you don’t end up with a dry, powdery mug cake. You can also pop it back in the microwave anyway if it’s undercooked. Better yet, let the mug cake sit on your countertop for a minute or two as it continues to cook with the residual heat.

Ingredients

1 egg
2 ½ tbsp heavy cream
1 ½ tbsp granulated Stevia or other low carb granulated sweetener
1 tbsp natural creamy peanut butter plus extra for decoration (optional)
1/2 tsp vanilla extract
2 tbsp cacao powder
1 tbsp coconut flour
1/2 tsp baking powder

Instructions

  1. In a microwave-safe mug place the egg, heavy cream, sweetener, peanut butter and vanilla extract and whisk to combine.
  2. Add the coconut flour, cacao powder and baking powder and whisk until smooth.
  3. Microwave on high for 75-90 seconds or until just firm to touch and toothpick inserted into the center comes out clean.
  4. Drizzle with extra peanut butter (if using) and serve.
