  1. Heat the olive oil in a large pot over medium heat. 
  2. Add the onion and cook for 1-2 minutes. 
  3. Add the garlic and ginger and cook for 30 seconds. 
  4. Add the curry powder, curry paste and cook for 2-3 minutes. 
  5. Add the chicken and cook, stirring frequently, until no longer pink. 
  6. Add the coconut milk, lime juice and diced tomato and mix to combine. 
  7. Cook until the chicken is cooked and curry is thickened. 
  8. Season to taste with salt and black pepper. 
  9. Top with fresh cilantro and serve.
