These keto snickerdoodle chaffles with a cinnamon glaze drizzle are a fantastic example of a keto breakfast meal that can be both satisfying and nourishing at the same time. It’s a sweet and savory twist on breakfast that’s great for people on the go since it can be made in just 20 minutes.
How to Make Keto Snickerdoodle Chaffles
You’ll only need 3 simple ingredients in order to make these tasty keto snickerdoodle chaffles.
- Combine the ingredients. Add the almond flour, one egg, and ½ cup of shredded mozzarella cheese to a bowl and mix to combine.
- Prepare your waffle maker. For this recipe, a mini waffle maker would work best but use whatever you have available.
- Pour the batter into the waffle maker. Pour ½ of the mixture into the waffle maker to fill the bottom part; be careful not to overfill.
- Cook for about 5 minutes. The cooking time differs slightly between waffle makers but it usually takes 5 minutes for the chaffles to be a nice golden brown on the outside.
- Prepare the coating. Add the ground cinnamon and a low carb granulated sweetener like Stevia to a small bowl and mix to combine.
- Brush. Brush the chaffles with melted butter.
- Sprinkle. Sprinkle the cinnamon mixture over top of the chaffles.
- Drizzle. Drizzle the homemade glaze (see below for details on how to make) over top of the chaffles.
- Serve. Serve immediately.

Can This Recipe Work for Pancakes?
Waffles are meant to crisp up on the outside while still keeping the center relatively soft and fluffy. For this reason, waffle recipes do not work too well as pancake recipes.

Yes, you can freeze your keto snickerdoodle chaffles.
You’ll first want to make sure that you allow the chaffles to cool completely after you make them. You can then either add them into a heavy duty, freezer-safe bag (use sheets of parchment paper to prevent the chaffles from sticking) or just freeze them individually in smaller size bags.

Ingredients
For the chaffles:
- 2 tbsp almond flour
- 1 egg
- ½ cup shredded mozzarella cheese

Instructions
- In a bowl combine the egg, almond flour and shredded mozzarella.
- Preheat a mini waffle maker.
- Pour half of the mixture to fill the bottom part, do not overfill.
- Cook for 5 minute or until golden brown.
- To make the coating, in a small bowl combine the sweetener and cinnamon.
- Brush the chaffles with meted butter and sprinkle with cinnamon mixture.
- To make the glaze, in a bowl whisk all the ingredients.
- Drizzle the glaze over chaffles and serve.
