  • Preheat the oven. Preheat your oven to 350℉.
  • Prepare the muffin pan. Line a 12-cup muffin pan with parchment paper and set aside.
  • Prepare the cinnamon sugar swirl. Add a low carb granulated sweetener like Stevia and ground cinnamon to a small dish and mix to combine.
  • Prepare the flour mixture. In a separate bowl, combine the almond flour, coconut flour, and baking powder.
  • Prepare the egg mixture. Use the bowl of a stand mixer fitted with the paddle attachment to beat the eggs and sweetener.
  • Beat the ingredients together. Add the pure vanilla extract, unsweetened almond milk, and melted butter and beat until incorporated.
  • Add the flour mixture. Add the almond flour mixture and beat until incorporated.
  • Spoon the mixture into the muffin cups.
  • Sprinkle. Sprinkle a layer of the cinnamon swirl mixture over top of the batter.
  • Repeat. Repeat the above 2 steps with the remaining batter and cinnamon swirl mixture.
  • Add crumble topping. Sprinkle the homemade crumble top over top of each muffin (see below for details).
  • Bake. Bake the muffins in the preheated oven for 10 minutes and then lower the temperature to 320℉ and bake for an additional 30-35 minutes.
  • Cool. Remove from the oven and allow the muffins to cool completely before serving.

How to Make the Best Muffin Crumble

Ingredients

For the muffins: 

  • 3 eggs 
  • 1/3 cup granulated Stevia or other low carb sweetener
  • 1/3 cup meted butter 
  • 2 tbsp unsweetened almond milk 
  • 1 tsp pure vanilla extract 
  • 1 1/3 cup almond flour 
  • 1 ½ tbsp coconut flour 
  • 2 tsp baking powder 

 

For the cinnamon sugar swirl: 

  • 1/3 cup granulated Stevia or other low carb sweetener 
  • 1 tbsp ground cinnamon

 

For the crumble: 

  • ½ cup almond flour 
  • ¼ cup butter, melted 
  • 3 tbsp granulated Stevia or other low carb granulated sweetener

Instructions

  1. Preheat oven to 350ºF. 
  2. Line a 12-cup muffin pan with paper cups. Set aside.
  3. To make the cinnamon sugar swirl, in a bowl combine the sweetener and cinnamon. Set aside. 
  4. In a bowl combine the almond flour, coconut flour and baking powder. 
  5. In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sweetener. 
  6. Add the vanilla extract, milk and melted butter and beat until combined. 
  7. Add the almond flour mixture and beat until incorporated. 
  8. Spoon small amount of the batter into each muffin cup.
  9. Sprinkle with a layer of the brown sugar and cinnamon mixture. 
  10. Repeat with remaining batter and cinnamon-sugar mixture. 
  11. To make the crumble, in a bowl combine all the ingredients. 
  12. Sprinkle the muffins with crumb topping. 
  13. Bake in preheated oven at 350 ºF for 10 minutes then lower the temperature to 320ºF and bake for 30-35 minutes.
  14. Remove from the oven and allow to cool completely before serving.
