Scrumptious Keto Cinnamon Swirl Muffins with a Crumble Top

For the muffins: 


For the cinnamon sugar swirl: 


For the crumble: 


  1. Preheat oven to 350ºF. 
  2. Line a 12-cup muffin pan with paper cups. Set aside.
  3. To make the cinnamon sugar swirl, in a bowl combine the sweetener and cinnamon. Set aside. 
  4. In a bowl combine the almond flour, coconut flour and baking powder. 
  5. In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sweetener. 
  6. Add the vanilla extract, milk and melted butter and beat until combined. 
  7. Add the almond flour mixture and beat until incorporated. 
  8. Spoon small amount of the batter into each muffin cup.
  9. Sprinkle with a layer of the brown sugar and cinnamon mixture. 
  10. Repeat with remaining batter and cinnamon-sugar mixture. 
  11. To make the crumble, in a bowl combine all the ingredients. 
  12. Sprinkle the muffins with crumb topping. 
  13. Bake in preheated oven at 350 ºF for 10 minutes then lower the temperature to 320ºF and bake for 30-35 minutes.
  14. Remove from the oven and allow to cool completely before serving.
