For the cereal: 


For the cinnamon topping:


  1. In a bowl combine the almond flour, salt, cinnamon, xanthan gum and baking powder. 
  2. Cream the butter and sweetener in another bowl. 
  3. Add the egg and beat to combine. 
  4. Add the almond flour mixture and mix to combine. 
  5. Wrap the dough with cling film and refrigerate for minimum 2 hours or overnight. 
  6. Preheat oven to 350°F.
  7. Place the dough between two pieces of parchment paper and roll out to 1/4″ thick. 
  8. Remove the top piece of parchment paper.
  9. Transfer the dough with parchment to a baking sheet.
  10. Freeze for 10 minutes. 
  11. Remove from the freezer and bake in preheated oven for 8-12 minutes or until golden brown. 
  12. In a bowl combine the melted butter, sweetener and ground cinnamon. 
  13. Brush the dough with butter-cinnamon mixture. 
  14. Allow to cool completely. 
  15. Cut into bite size pieces.  
  16. Store in an airtight container.
