Creamy Keto Chocolate Mousse Pie with a Homemade Peanut Butter Crust

Instructions

  1. Lightly grease a 9-inch pie dish and set aside. 
  2. To make the crust, in the bowl of a stand mixer fitted with the paddle attachment cream the peanut butter, butter and sweetener until smooth. 
  3. Add the eggs and vanilla extract and beat to combine. 
  4. Add the almond flour, baking powder and sat and beat until incorporated. 
  5. Press the mixture into the bottom and up the sides of the pie dish.
  6. Refrigerate for minimum one hour. 
  7. Preheat oven to 325°F. 
  8. Bake the crust in preheated oven for 15-20 minutes.
  9. Remove from the oven and allow to cool completely. 
  10. To make the filling, place the gelatin and water in a small saucepan and melt it over low heat. 
  11. In the bowl of a stand mixer fitted with the whisk attachment beat the heavy cream and sweetener on medium-high speed until the cream starts to thicken.
  12. Add the gelatin and beat until stiff peaks form. 
  13. Set aside. 
  14. In another bowl beat the cream cheese, vanilla extract and melted chocolate until well combined. 
  15. Fold in the prepared whipped cream. 
  16. Spoon the filling into the pie shell. 
  17. Cover and refrigerate until firm, at least 2-3 hours.
  18. Remove the pie from the refrigerator. 
  19. Drizzle with melted chocolate and sprinkle with chopped peanuts (if using).
  20. Cut into pieces and serve with dollop of whipped heavy cream (if using).
