Easy Keto Chocolate Chip Muffins for a Quick Snack or Dessert

  1. Preheat oven to 350ºF. 
  2. Line 8 muffin cups with paper cups. Set aside.
  3. In a bowl combine the almond flour, baking powder and pinch of salt. Set aside. 
  4. In the bowl of a stand mixer fitted with the paddle attachment beat the eggs and sweetener. 
  5. Add the heavy cream and vanilla extract and beat until well combined. 
  6. Add in the almond flour mixture and beat until smooth.  
  7. Fold in the chocolate chips. 
  8. Scoop the batter into the prepared muffin cups. 
  9. Bake in preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean. 
  10. Remove from the oven and allow to cool completely before serving.
