Ingredients

4 (6 ounces each) boneless skinless chicken breasts
2 tsp Italian seasoning
2 tbsp chopped red onion
2 garlic cloves, minced
2 tbsp olive oil
1 can (15 oz) diced tomatoes
2 drops liquid Stevia or to taste
4 oz mozzarella cheese, cut into 4 slices
2 tbsp grated Parmesan
1 tbsp freshly chopped parsley, to garnish
salt and black pepper, to season

Instructions

  1. Preheat oven to 425°F.
  2. Season the chicken with salt, black pepper and 1 teaspoon of Italian seasoning.
  3. Heat 1 tablespoon of olive oil in a cast iron pan over medium heat.
  4. Add chicken and cook 3-4 minutes per side.
  5. Remove the chicken from the pan and place on a plate. Set aside.
  6. In the same pan heat the remaining olive oil over medium heat.
  7. Add the onion and cook 2-3 minutes.
  8. Add the garlic and cook for 30 seconds.
  9. Add the chopped tomatoes, liquid Stevia and remaining Italian seasoning.
  10. Season to taste with salt and black pepper and cook for 3-4 minutes.
  11. Arrange the chicken in the sauce.
  12. Transfer the pan to the oven and bake for 5-10 minutes or until the chicken is fully cooked.
  13. Place a slice of mozzarella cheese on top of each piece of chicken and sprinkle each piece of chicken with Parmesan.
  14. Bake for 5-10 minutes or until the cheese is bubbling.
  15. Remove from the oven and sprinkle with chopped parsley.
  16. Serve warm with zucchini noodles or your favorite salad.
