Baked Keto Chicken Parmesan

4 (6 ounces each) boneless skinless chicken breasts
2 tsp Italian seasoning
2 tbsp chopped red onion
2 garlic cloves, minced
2 tbsp olive oil
1 can (15 oz) diced tomatoes
2 drops liquid Stevia or to taste
4 oz mozzarella cheese, cut into 4 slices
2 tbsp grated Parmesan
1 tbsp freshly chopped parsley, to garnish
salt and black pepper, to season
- Preheat oven to 425°F.
- Season the chicken with salt, black pepper and 1 teaspoon of Italian seasoning.
