Ingredients

8 cups cauliflower florets
1 cup heavy cream
6 ounces cream cheese
1tsp curry powder
1 tsp Dijon mustard
6 ounces mozzarella, shredded
6 ounces sharp cheddar, shredded, plus more for sprinkling
salt, black pepper to taste

Instructions

  1. Preheat oven to 350°F.
  2. Place the cauliflower in a large microwave -safe bowl.
  3. Add pinch of salt and toss to combine.
  4. Cover with plastic wrap.
  5. Pierce the plastic with a knife a few times.
  6. Microwave on high for 8-10 minutes or unit cauliflower is fork tender.
  7. Carefully remove the plastic and drain the cauliflower. Set aside.
  8. In a bowl combine the cream cheese, heavy cream, curry powder, mustard, mozzarella and cheddar.
  9. Add the cauliflower and toss to combine.
  10. Season with salt and black pepper to taste.
  11. Place the mixture in one large baking dish or 6 small dishes.
  12. Sprinkle with extra cheddar cheese.
  13. Bake in preheated oven for 45 minutes for large dish or 30 minutes for small dishes.
  14. Serve warm.
