Butterscotch Chocolate Chip Fudge (Keto-friendly)

  1. Line an 8×8 inch baking pan with parchment paper. 
  2. Set aside. 
  3. Add the butter to a heavy bottom saucepan and melt it over medium heat. 
  4. Add the sweetener and stir constantly. 
  5. Bring to a low boil. 
  6. Cook and stir until until mixture turns a nice amber color. 
  7. Remove from the heat and stir in vanilla extract, salt and almond butter. 
  8. Stir constantly until cooled. 
  9. Fold in the chocolate chips. 
  10. Pour the mixture into the prepared baking pan. 
  11. Refrigerate overnight. 
  12. Slice and serve.
