Keto Sugar Cookies

1 ½ cup almond flour
¼ cup coconut flour
1 tsp baking powder
pinch of salt

1/3 cup butter (or ghee), softened
1/3 cup granulated Stevia or other low carb granulated sweetener
1 large egg
1 tsp vanilla extract


  1. In a bowl combine the almond flour, coconut flour, pinch of salt and baking powder.
  2. In another bowl cream the butter and sweetener until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Slowly add in the almond flour mixture and beat until the dough comes together.
  5. Chill the dough for at least 4 hours.
  6. Roll the dough into a log about 6-7 inches long.
  7. Slice the cookies about 1/3-inch thick and place on a baking sheet lined with parchment paper.
  8. Freeze for 20 minutes.
  9. Preheat oven to 325°F.
  10. Remove the baking sheet from the freezer and bake for 8-12 minutes or until cookies begin to brown.
  11. Remove from the oven and allow to cool completely on the pan.
