2 tbsp butter
2 tbsp chopped onion
2 garlic cloves, minced
8 oz broccoli, chopped
4 cups chicken broth
1 tablespoon cream cheese
¼ cup heavy cream
1 cup shredded cheddar cheese plus extra for decoration ( optional)


  1. In large pot, melt the butter over medium heat.
  2. Add the onion and cook for 4-5 minutes.
  3. Add the garlic and cook for 30 seconds.
  4. Add the broccoli and chicken broth and cover with a lid.
  5. Simmer for 30 minutes or until the broccoli is tender.
  6. Remove from the heat.
  7. Add in the cream cheese and heavy cream.
  8. Puree the soup using an immersion blender.
  9. Return the pot to the stove and bring the soup to a boil.
  10. Turn off the heat and stir in the cheese and allow to melt.
  11. Season with salt and black pepper to taste and serve immediately.
